A Taste of the Mediterranean: Tuna Salad with Fresh Herbs and Citrus


  1. 2 cans of tuna in olive oil, drained
  2. 1/4 cup red onion, finely chopped
  3. 1/4 cup fresh parsley, chopped
  4. 1/4 cup fresh basil, chopped
  5. 2 tablespoons capers, rinsed and drained
  6. 1/4 cup Kalamata olives, pitted and sliced
  7. 1/4 cup roasted red peppers, chopped
  8. 1/4 cup cherry tomatoes, halved
  9. 2 tablespoons extra virgin olive oil
  10. 1 tablespoon lemon juice
  11. Salt and pepper to taste
  12. Mixed greens or lettuce leaves for serving


In a large bowl, combine the drained tuna, red onion, parsley, basil, capers, Kalamata olives, roasted red peppers, and cherry tomatoes.
In a small bowl, whisk together the extra virgin olive oil and lemon juice. Season with salt and pepper to taste.
Pour the dressing over the tuna mixture and gently toss to combine.
Serve the tuna salad on a bed of mixed greens or lettuce leaves.
