Luscious Avocado Pesto Fusion Pasta Salad


  • 12 oz pasta, any shape
  • 2 ripe avocados, peeled and pitted
  • 1 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 2 tablespoons lemon juice
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup fresh arugula


Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
In a blender or food processor, combine avocados, basil, garlic, pine nuts, and lemon juice. Blend until smooth.
With the blender running, slowly add the olive oil until the mixture is creamy. Season with salt and pepper.
In a large bowl, combine the cooled pasta, avocado pesto, Parmesan cheese, cherry tomatoes, mozzarella balls, and arugula. Toss until everything is evenly coated with the pesto.
Serve chilled or at room temperature.
